Method: Long Charmat, 20 days on lees.
Colour: Bright straw yellow.
Perfume: Memoirs of yellow apple, flower aromas, chamomile.

Food Pairings: Perfect on its own, or ideal with fresh fish, delicate risottos, and white meats.
